Tasting Notes
The Bubbles: Everyday Exploration
The Cellar: Special Occasion
If Champagne were a wardrobe, Blanc de Blancs would be the perfectly tailored white shirt. Classic & Elevated.
Made exclusively from white grapes, typically Chardonnay, it means "white from white." In the glass it's refined and precise, the way a pencil drawing is. Crisp acidity, notes of citrus, green apple, and a minerality (wet stones) that lingers like the detail in a fine sketch. It ages beautifully, revealing more complexity over time, similar to how your eye finds new things in a painting the longer you stand in front of it.

It's the art of transformation, what you see is never the whole story.
Blanc de Noirs translates to "white from blacks", and that tension makes it fascinating. Made entirely from dark-skinned grapes, typically Pinot Noir and Pinot Meunier, the juice is separated from the skins almost immediately after pressing. The result is a white sparkling wine carrying the soul of a red. Richer, full bodied and more textured than a Blanc de Blancs, with red fruit notes of strawberry, raspberry, and cherry underneath crisp acidity.
Think of it the way a fashion stylist thinks about texture. A silk blouse looks simple from across the room. Get closer and you see the way it catches the light and the quiet confidence it carries. Blanc de Noirs is elegance on the surface, and complex underneath. The grapes are dark, the wine is pale, and everything interesting lives in between.

In the glass and on the canvas, the most arresting things are rarely one thing or the other. They are both. They are the ombré.
The pink blush color is a result of either brief skin contact with dark grapes, or the careful blending of still red wine into the base. These beautiful Bubbles are fruity and fragrant like a Blanc de Blancs, but richer and more textured. Vibrant notes of strawberry, raspberry, and cherry alongside a warmth that white Champagne simply cannot reach.
Think of it as a painting made at the exact moment the sky can't decide between day and night. The colors shouldn't work together, (pale gold bleeding into deep rose, coral dissolving into violet) and yet the result is the most breathtaking thing you've seen all day. Rosé Champagne is that sky.
It exists precisely where its magic lives.

It's the same magic that happens when you mix yellow and blue, and discover green was there all along.
The traditional blend is what most people picture when they think of Champagne. Made from all three primary grapes working in harmony: Pinot Noir for structure and depth, Pinot Meunier for warmth and fruit, and Chardonnay for the bright acidity and elegance that ties it all together.
Think of it the way a painter thinks about color. Pinot Noir is your bold, confident brushstroke. Meunier is the warmth that fills the canvas. Chardonnay is the light that makes everything luminous. Alone, each is interesting. Together, they create something vibrant.
